Well they are really ‘haunch’s’, not shanks, but what’s a word between friends. Possum is a lovely meat with a flavor similar to wild rabbit. Cook it long and slow. Fantastic cooked in duck fat. It is delicious braised with root vegetables, red wine, and pepper-berry. It marries well with sweet flavors like pears. This product will leave us vacuum-packed and frozen. If it arrives defrosted, it should be cooked within 3 days.
