Boneless Possum 1kg

Possum is a lovely meat, with a flavor similar to wild rabbit.  Cook it long and slow.  Fantastic cooked in duck fat.  Delicious braised with root vegetables, red wine and pepper-berry. Marries well with sweet flavors like pears.
